The "organ" effect you're referring to at 1:24 of the audio was intentional, but it was a bear getting the right combination of instruments to achieve it--not just the instruments but making the digitized dynamic markings on all the instruments just precise to get it eg. if I'd put a mp on the top oboe instead of a p I would have lost it.
I learned orchestration just by working on Notion (any VST notation program will do but the playback has to be good/excellent quality, not mickey-mouse free things on the Internet like Muse and Opera). I bought Notion three years ago for $199--an excellent buy at the time considering the reproduction quality, though good speakers do play a huge part in what you hear; some complain to me that the music sounds terrible and I need Vienna or EWQL--my Bose speakers, however, make it sound like the Berlin Phil. Just by playing with the various instrument combinations one can teach themselves what works best. I have harmony training and piano training which helped a great deal, but there's a steep learning curve to working with Notion, and now it's jumped to $499, I think it is.
Again, very glad you enjoyed it. I hope you check out my Piano Concerto No 2, also here on CF and YouTube w/ score, though the screen capture program deteriorated the sound quality immensely.
